Honey Cajun Shrimp

If you like shrimp, you are going to LOVE this recipe!
  • 2 tablespoons fresh lemon juice
  • ¼ cup olive oil
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons chopped parsley, divided
  • 1 pound large raw shrimp, peeled and deveined
  • Optional: ½ teaspoon lemon zest
  1. In large, zippered bag, add lemon juice, olive oil, soy sauce, honey, Cajun seasoning and 1 tablespoon chopped parsley. Seal bag and gently mix ingredients together.
  2. Add shrimp, reseal bag and toss to coat. Marinate in refrigerator for 1-2 hours.
  3. Preheat oven to 450 degrees. Transfer shrimp, along with marinade, to large baking dish. Arrange shrimp in single layer and bake, uncovered, for 8-10 minutes (don’t overcook).
  4. Remove from oven, sprinkle with remaining parsley and lemon zest, if desired, and serve.
  5. Hint - the remaining liquid makes an excellent dipping sauce for a crusty baguette!
