Green Tea Shrimp with Lemon Ginger Sauce

Today’s recipe for Green Tea Shrimp with Lemon Ginger Sauce is the perfect healthy appetizer to share at a New Year’s party or it can be a wonderful light meal to enjoy anytime!
  • 28 (~1lb) extra-large shrimp
  • 1 cup water
  • 2 ginger flavored green tea bags
  • 1 teaspoon lemon zest
  • ¼ cup fresh lemon juice
  • 2 tablespoons honey
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon low-sodium tamari sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon lemon pepper blend
  • 2 tablespoons chopped fresh cilantro
  • 2 cups cooked brown rice
  1. Peel and devein shrimp leaving tail on.
  2. Bring water to boil; add tea bags and let steep for 2-3 minutes.
  3. In medium bowl, combine cooled tea, lemon zest, lemon juice, honey, ginger, tamari sauce and garlic; set aside.
  4. Heat oil over medium-high heat in large sauté pan. Add shrimp, sprinkle with salt and lemon pepper. Sear on one side; turn shrimp and add tea sauce to pan. Simmer for 2 minutes; add cilantro and continue to simmer over low heat for additional minute.
  5. Remove shrimp and cook sauce over medium heat until reduced by about half. Place shrimp back in sauce. Serve over brown rice.
